Soft & Chewy Protein Sugar Cookies (Small Batch, No Chill!)
This small batch sugar cookie recipe makes 4 big sugar cookies that have added protein. Yum!
Who doesn’t love a big, soft sugar cookie? Making a small batch of cookies is the perfect way to make sure we don’t overindulge. These deliciously sweet sugar cookies have added protein, making them a great post-workout snack or addition to a healthy breakfast.
Ingredients
⅓ cup cold butter
⅓ cup granulated sugar
½ tsp vanilla extract
1 egg yolk
½ tsp baking soda
½ cup all-purpose or gluten-free 1-to-1 flour
¼ cup whey protein powder (vanilla or unflavored works best)
Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In the bowl of a stand mixer, cream the cold butter and sugar until smooth—no clumps of butter should remain.
Add in the vanilla extract and egg yolk, and mix until fully incorporated.
Add in the baking soda, flour, and whey protein powder. Stir until just combined—don’t overmix.
Scoop out 4 large dough balls. Place them at least 3 inches apart on the prepared pan.
Bake for 8–9 minutes, or until the edges are just lightly golden and the centers look set but still soft.
Remove from the oven and let cool on the pan for 5+ minutes. The cookies will be soft and gooey right out of the oven, but will firm up as they cool.
Note:
If the dough seems too dry (some protein powders absorb more moisture), you can add 1–2 teaspoons of milk or almond milk.
