Baked Peaches with Dairy Free “Ice Cream”

Baked peaches with ice cream made from frozen bananas is an indulgence you won’t ever feel bad about eating.

Peaches are a big thing here in Colorado in the summertime! I’m looking forward to grabbing some fresh peaches at the Boulder Farmers Market this summer and making this exact recipe!

Ingredients: For the Peaches

  • 4 teaspoons brown sugar

  • 1 tablespoon butter, cut into 4 pieces

  • 2 ripe peaches, halved and pitted

    Ingredients: For the “ice cream”

  • 4 frozen, peeled bananas

  • 1 vanilla bean, split in half

  • 1/4 cup + milk of choice

    Instructions: For the “Ice Cream”

  • Add your bananas, vanilla bean paste from inside the vanilla bean to a food processor

  • Pulse the food processor a few times so the vanilla can start to mix in

  • Add 1/4 cup of milk

  • Blend until you have a creamy ice cream texture, add more milk if needed

  • Place back into the freezer while you make your peaches

    Instructions: For the Peaches

  • Preheat the oven to 400 degrees F (200 degrees C).

  • Arrange your peach halves, skin side down, in a baking dish.

  • Top each peach with a teaspoon of brown sugar

  • Top each brown sugar mound with a piece of butter.

  • Bake in the preheated oven until peaches are soft, 15 to 20 minutes.

  • Plate 2 warm peach halves per serving and top with “ice cream”
